Other noteworthy factors:

  • The owner currently works an average of 35-40 hours per week between both locations- and he is the only employee at one location.  12-15 hours at Knapp, and 23 hours at Fuller.
  • There is little to no administrative work done independently of the hours worked at the stores.  Things like ordering, scheduling, bookkeeping, and communications, can all be done on site during slower periods.
  • There are currently 10 people on payroll and all currently work at Knapp.  Half of them have worked at Fuller, also.
  • The staff is currently the best it’s ever been.  All but a couple of employees have been employed for over a year, and some over 2 years.
  • All staff except a couple of newer hires have a key and are capable of opening and closing.
  • One staff person is capable of working at most times.  However, in most cases, the owner staffs 2 people at most times for the employee’s sake.
  • Tips are handled:  All tips come in and get paid out based on how much each person works for that day, broken out per day.  Credit/ debit card tips paid on staff’s checks and cash tips paid out via cash every two weeks.
